Scrub the potatoes and cut them lengthwise into wedges (about 8 wedges per potato).
Soak the potatoes in cold water for 30 minutes. Drain and pat completely dry for extra crispy wedges
Mix olive oil, paprika, garlic powder, onion powder, salt, and pepper in a large bowl. Add the potatoes and toss to coat evenly.
Preheat your air fryer to 200°C (400°F). Arrange potato wedges in the air fryer basket in a single layer (you may need to cook them in batches).
Cook (first stage): Air fry for 15 minutes.
Increase heat & finish: Increase temperature to 205°C (405°F) and cook for 5-10 more minutes or until golden brown and crispy. Shake the basket halfway through cooking.
