Ingredients
1-2lbsboneless, skinless chicken thighs
¼cupolive oil
2tbsp lemon juice
1tbspdried oregano
1tspgarlic powder
½tspsmoked paprika
½tspsalt
¼tspblack pepper
Instructions
Marinate the chicken (optional): In a large bowl, whisk together olive oil, lemon juice, oregano, garlic powder, paprika, salt, and pepper. Add the chicken thighs and toss to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
Preheat your grill to medium-high heat (around 400°F). You can also use a grill pan on your stovetop.
Grill the chicken thighs for 5-7 minutes per side, or until cooked through and reach an internal temperature of 165°F. Use a meat thermometer to check for doneness.
