Ingredients

  • 1.5g  chicken thighs [about 6-8]
  • tbsp butter
  • 2 onions
  • 4 potatoes
  • 2 carrots
  • 2 stalks of celery
  • 4 sprigs thyme
  • 7 fl oz  white wine
  • 7 fl oz chicken broth
  • 100g of olives
  • Italian seasoning to taste
  • salt

Instructions

  • Wash and dry the chicken. Rub the chicken with salt and butter.
  • Preheat the oven to 360℉ (180℃).
  • Peel 2 onions, 4 potatoes, and 2 carrots and chop the vegetables into large pieces. Cut 2 celery stalks into cubes.
  • Place the chicken in a roasting pan and arrange the vegetables around it.
  • Pour in the wine and chicken broth (or water). Add 4 sprigs of thyme.
  • Cover the fry pot with a lid and place in the oven for 1 hour.
  • Then remove the lid and cook for another 30 minutes to brown the chicken
