Prep Time 1 hour 24 minutes
Cook Time 45 minutes

Ingredients

  • 500 g bread flour
  • 350 g water
  • 200 g active sourdough starter
  • 10 g salt

Instructions

  • In a large mixing bowl, combine the bread flour and water. Stir until a shaggy dough forms, then cover with a damp cloth and let it rest for 30 minutes.
  • Add the active sourdough starter to the dough and mix until well combined.
  • Sprinkle the salt over the dough and knead it for about 10-15 minutes until the dough becomes smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise at room temperature for about 4-6 hours, or until doubled in size.
  • Once the dough has doubled in size, gently deflate it and shape it into a round loaf.
  • Place the shaped dough in a floured proofing basket or a bowl lined with a kitchen towel, cover it, and let it rise for another 2-3 hours, or until puffy.
  • About 30 minutes before the final rise is complete, preheat the oven to 450°F (230°C) and place a Dutch oven or a baking stone inside to heat up.
  • Once the dough has finished rising, carefully transfer it to the preheated Dutch oven or baking stone. Score the top of the dough with a sharp knife or razor blade.
  • Cover the Dutch oven with its lid (or use a large overturned bowl to cover the baking stone) and bake for 20 minutes.
  • Remove the lid and continue baking for another 20-25 minutes, or until the bread is deep golden brown and sounds hollow when tapped on the bottom.
  • Allow the bread to cool on a wire rack for at least 1 hour before slicing. Enjoy your homemade sourdough bread!
