Easy Strawberry Pie With Frozen Strawberries

Ingredients

For the filling:

  • 6 cups frozen strawberries
  • 1 cup granulated sugar
  • cups lemon juice
  • ½ cup cornstarch

For the pie crust:

  • You can use your favourite pie crust recipe or two pre-made pie shells (one for the bottom and a lattice top)

Instructions

  • In a large saucepan, combine the frozen strawberries, sugar, lemon juice, and cornstarch. Heat over medium-low heat for about 3 minutes, stirring occasionally, until the strawberries soften and release some juices.
  • Increase the heat to medium and cook for 15-20 minutes, or until the mixture thickens. The filling should be bubbly and clear. Remove from heat and let cool for at least an hour.
  • If you’re making your own crust, preheat your oven according to the recipe instructions. Bake the bottom pie crust according to the recipe or package directions for blind baking (usually partially baking the crust without the filling).
  • Once the filling is cool and the crust is baked, pour the strawberry filling into the bottom pie crust. If using a top crust, weave it over the filling to create a lattice or cover completely. Brush the top crust with milk or cream for a golden brown colour (optional).
  • If you pre-baked the bottom crust, bake the entire pie for 20-25 minutes at 375°F (190°C), or until the crust is golden brown and the filling is bubbly around the edges. If you didn’t pre-bake the crust, bake for 40-45 minutes until the crust is golden brown and the filling is bubbly.
  • Let the pie cool completely on a wire rack before slicing and serving. You can enjoy it as is or with whipped cream or vanilla ice cream on the side.
