Eggless Semolina Coconut Cake Recipe

Ingredients

  • 1 cup semolina
  • 1 cup desiccated coconut
  • 1 cup almond milk/coconut milk
  • ½ cup coconut sugar
  • ¼ cup coconut oil
  • 1 tsp  baking powder
  • 1 tsp baking soda
  • salt
  • ½ cup plain yoghurt
  • ½ cup honey

Instructions

  • In a large mixing bowl, combine 1 cup of semolina, 1 cup of desiccated coconut, 1 tsp of baking powder, 1/2 tsp of baking soda, and a pinch of salt.
  • Use a whisk or fork to mix the dry ingredients together until they are well combined.
  • Set the bowl aside while you prepare the wet ingredients.
  • In a separate bowl, combine the milk, 1/2 cup of plain yoghurt, 1/2 cup of honey, and 1/4 cup of melted coconut oil.
  • Whisk the wet ingredients together until they are well combined.
  • Then, pour the wet ingredients into the bowl with the dry ingredients and mix everything together until you have a smooth batter.
  • If the batter is too thick, you can add a little bit of water to thin it out
  • Once the batter is ready, pour it into a greased cake pan and bake in a preheated oven at 350°F for 25-30 minutes or until a toothpick inserted in the centre comes out clean.
  • Once the cake is done, remove it from the oven and let it cool for a few minutes.
