Ingredients
1pound capellini pasta
¼cupolive oil
¼cupfreshly squeezed lemon juice (about 2 lemons)
1tbsplemon zest
2cloves garlic, minced
½tspsalt
¼tspblack pepper
¼cupgrated Parmesan cheese
¼cupchopped fresh parsley
Instructions
Bring a large pot of salted water to a boil. Cook the capellini according to package directions until al dente. Drain.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Stir in lemon juice, zest, salt, and pepper.
Add the cooked pasta to the skillet and toss to coat with the sauce.
Stir in the Parmesan cheese and parsley until melted and combined.
