Lemon Capellini

Ingredients

  • 1 pound capellini pasta
  • ¼ cup olive oil
  • ¼ cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tbsp lemon zest
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley

Instructions

  • Bring a large pot of salted water to a boil. Cook the capellini according to package directions until al dente. Drain.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Stir in lemon juice, zest, salt, and pepper.
  • Add the cooked pasta to the skillet and toss to coat with the sauce.
  • Stir in the Parmesan cheese and parsley until melted and combined.
  • Serve immediately.
