Whisk together flour, baking powder, and salt in a large bowl.
Whisk together egg, milk, almond extract, and melted butter in a separate bowl.
Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix! A few lumps are okay.
Fold in the chopped mangoes.
Heat a lightly greased griddle or pan over medium heat.
Pour ¼ cup batter per pancake onto the griddle.
Cook for 2-3 minutes per side or until golden brown and cooked through.
Serve immediately with your favourite toppings, such as maple syrup, whipped cream, or fresh mango slices.
