Mango Pancakes

Ingredients

  • cup sifted all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • cups milk
  • 1 tsp almond extract (or vanilla extract)
  • 3 tbsp unsalted butter, melted and cooled
  • 2 medium mangoes, chopped into ½ inch cubes (about 1 cup)

Instructions

  •  Whisk together flour, baking powder, and salt in a large bowl.
  • Whisk together egg, milk, almond extract, and melted butter in a separate bowl.
  • Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix! A few lumps are okay.
  • Fold in the chopped mangoes.
  • Heat a lightly greased griddle or pan over medium heat.
  • Pour ¼ cup batter per pancake onto the griddle.
  • Cook for 2-3 minutes per side or until golden brown and cooked through.
  • Serve immediately with your favourite toppings, such as maple syrup, whipped cream, or fresh mango slices.
