Puerto Rican Black Beans Recipe

Ingredients

  • 2 cups  black beans, soaked overnight
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tbsp  olive oil
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt 
  • ½ tsp black pepper
  • 2 tbsp tomato paste
  • 4 cups vegetable or chicken broth
  • 1 tbsp apple cider vinegar

Instructions

  • Drain and rinse the soaked black beans.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Cook until the onion becomes translucent, about 5 minutes.
  • Add the soaked black beans, oregano, bay leaf, cumin, paprika, salt, black pepper, and tomato paste to the pot. Stir well to coat the beans with the spices.
  • Pour in the vegetable or chicken broth and bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let the black beans simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth if needed.
  • Once the beans are tender, stir in the apple cider vinegar and let it simmer for an additional 10 minutes.
  • Remove the bay leaf before serving.
  • Serve the Puerto Rican black beans over rice or with your choice of meat or vegetables. Enjoy!
