Roasted Eggplant

 With a perfect blend of garlic and herbs, it’s sure to be a hit with your taste buds. Eggplant contains nutrients and antioxidants, making it a great addition to any meal.

Ingredients

  • 1 large  eggplant
  • 1 tsp salt
  • 1 tbsp olive oil

Instructions

  • Cut the eggplant lengthwise into long strips about 1/3 of an inch thick
  • Carefully spring salt over both sides of the eggplant and allow it to sit for 5 minutes.
  • Rub each slice with olive oil and transfer to a hot grill.
  • Turn once to leave grill marks on both sides of the eggplant.
  • Done when it’s tender and juicy!
