Cook the lo mein noodles according to the package instructions. Drain and set aside.
In a small bowl, mix the soy sauce, oyster sauce, and hoisin sauce. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove the shrimp from the skillet and set aside.
In the same skillet, add the garlic and ginger. Cook for 1 minute until fragrant.
Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
Return the shrimp to the skillet, then add the cooked lo mein noodles and the sauce mixture. Toss everything together until well combined and heated through.
Stir in the sliced green onions and sesame oil. Season with salt and pepper to taste.
