Quick And Easy Mince Pie Recipe

Ingredients

  • 225 g plain flour
  • 100 g butter (cubed)
  • 1 egg yolk
  • 1-2 tsp cold water
  • 410 g mincemeat
  • A dash of milk
  • Icing sugar for dusting

Instructions

  • Preheat your oven to 200°C/180°C fan/gas mark 6.
  • Sift the flour into a bowl and add the cubed butter. Rub the butter into the flour until it resembles breadcrumbs.
  • Mix in the egg yolk and add enough cold water to form a dough.
  • Roll out the pastry on a floured surface to about 3mm thick.
  • Cut out 12 circles using a pastry cutter to fit into a 12-hole muffin tin.
  • Spoon a heaped teaspoon of mincemeat into each pastry case.
  • Take the remaining pastry and cut out 12 smaller circles to fit on top of the mincemeat.
  • Brush the edges of the pastry cases with a little milk and place the smaller pastry circles on top.
  • Brush the tops with a little more milk.
  • Bake in the preheated oven for 15-20 minutes or until golden brown.
  • Dust with icing sugar and serve warm with a dollop of whipped cream or brandy butter.
