Ingredients
225g plain flour
100g butter (cubed)
1 egg yolk
1-2 tbsp cold water
410g mincemeat
A dash of milk
Icing sugar for dusting
Instructions
Preheat your oven to 200°C/180°C fan/gas mark 6.
Sift the flour into a bowl and add the cubed butter. Rub the butter into the flour until it resembles breadcrumbs.
Mix in the egg yolk and add enough cold water to form a dough.
Roll out the pastry on a floured surface to about 3mm thick.
Cut out 12 circles using a pastry cutter to fit into a 12-hole muffin tin.
Spoon a heaped teaspoon of mincemeat into each pastry case.
Take the remaining pastry and cut out 12 smaller circles to fit on top of the mincemeat.
Brush the edges of the pastry cases with a little milk and place the smaller pastry circles on top.
Brush the tops with a little more milk.
Bake in the preheated oven for 15-20 minutes or until golden brown.
Dust with icing sugar and serve warm with whipped cream or brandy butter.
