Chipotle Lime Shrimp Kabobs

Would you like to create a game night appetizer that’s easy and delicious? Here’s a tasty recipe for Chipotle Lime Shrimp Skewers.

Prep time: 45 minutes including marinating
Cook time: 6 minutes
Serves: 4

Marinade Ingredients

1/4 c. extra virgin olive oil

1/4 c. freshly squeezed lime juice (2 limes)

1 T. lime zest

1 t. chipotle chilli pepper

1/2 t. smoked paprika

1 t. garlic powder

1 t. onion powder

1 T. honey

salt and black pepper, to taste

Remaining Ingredients:

1-1/4 lbs. extra-large peeled deveined shrimp

4 skewers*

*Note:

For this dish, I recommend using four metal skewers between 12 and 15 inches in length. For safety, soak wooden skewers in water for at least 30 minutes before adding shrimp.

Directions

In a small container with a cover, whisk together the marinade ingredients.

Pour half of the marinade mixture into a large nonreactive bowl, leaving the other half in the jar to serve.

Toss the shrimp in the basin to coat. Marinate for at least 15 minutes, but no more than 30.

Thread 5-6 shrimp each skewer onto skewers.

Preheat the grill to medium-high. Turn the heat down to medium. Grease the grill grate lightly. 3-4 minutes on each side, or until shrimp are no longer transparent. Keep an eye on the shrimp since they cook rapidly and turn rubbery if overdone.

Place the grilled chicken on a serving plate.

Drizzle with the remaining marinade.

Serve immediately with fresh parsley sprigs and lime slices, or as directed above.

This is best served hot right off the grill. I like them as an appetizer, on top of a fresh garden salad, or in shrimp tacos.
