Ingredients:
- 1.5 pounds carrots (around 6 large carrots), peeled and sliced diagonally into 1/4-inch thick pieces
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- Salt and freshly ground black pepper, to taste
- Optional: 2 teaspoons chopped fresh chives for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
