Maple Roasted Carrots

Indulge in the sweet and savory flavors of fall with our irresistible Maple Roasted Carrots recipe. Perfect for adding a burst of color and taste to your dining table, this dish combines the earthy sweetness of carrots with the rich aroma of maple syrup.

Ingredients:

  • 1.5 pounds carrots (around 6 large carrots), peeled and sliced diagonally into 1/4-inch thick pieces
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • Salt and freshly ground black pepper, to taste
  • Optional: 2 teaspoons chopped fresh chives for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss together the carrots, olive oil, maple syrup, salt, and pepper. Make sure the carrots are evenly coated.
  3. Spread the carrots on a rimmed baking sheet in a single layer. If they’re crowded, they will steam instead of roast.
  4. Roast the carrots for 20-25 minutes, or until tender and slightly caramelized on the edges. You can stir them halfway through for even cooking.
  5. Once roasted, take the pan out of the oven and garnish with chopped fresh chives, if desired.

Tips:

  • For a richer flavor, you can use melted butter instead of olive oil.
  • Play around with spices! A pinch of cayenne pepper or a sprinkle of ground cumin can add a nice kick.
  • Fresh herbs like rosemary or thyme can also be added to the pan for extra flavor. Just toss them with the carrots before roasting.
  • If you like your carrots glazed, you can brush them with additional maple syrup during the last few minutes of roasting.
