Here’s a recipe for thick and fluffy mango pancakes:

Ingredients:

  • 1 ½ cup sifted all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg (room temperature)
  • 1 ¼ cup milk (room temperature)
  • 1 teaspoon almond extract (or vanilla extract)
  • 3 tablespoons unsalted butter, melted and cooled
  • 2 medium mangoes, chopped into ½ inch cubes (about 1 cup)

Instructions:

  1.  Whisk together flour, baking powder, and salt in a large bowl.
  2. Whisk together egg, milk, almond extract, and melted butter in a separate bowl.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix! A few lumps are okay.
  4. Fold in the chopped mangoes.
  5. Heat a lightly greased griddle or pan over medium heat.
  6. Pour ¼ cup batter per pancake onto the griddle.
  7. Cook for 2-3 minutes per side or until golden brown and cooked through.
