Ingredients
2 cups Bisquick mix
2/3 cup milk
1 teaspoon dried parsley flakes (optional)
1/2 teaspoon dried thyme (optional)
Salt and pepper, to taste
4 cups chicken or vegetable broth
2 cups cooked and shredded chicken (optional for chicken and dumplings)
Instructions:
In a mixing bowl, combine the Bisquick mix, milk, dried parsley flakes, dried thyme, salt, and pepper. Stir until a soft dough forms.
In a large pot, bring the chicken or vegetable broth to a simmer over medium heat. If making chicken and dumplings, add the shredded chicken to the pot.
Drop tablespoon-sized portions of the dough onto the simmering broth. Cover the pot and let the dumplings cook for about 10 minutes or until they are cooked through and fluffy.
Gently stir the dumplings occasionally to prevent them from sticking to the bottom of the pot.
Serve the dumplings in bowls with the broth. You can also serve them over a bed of cooked vegetables or alongside your favourite meat dish.
