Chicken and creamy bacon with mushroom pasta

This mouthwatering dish combines tender chicken, crispy bacon, and earthy mushrooms in a rich and creamy sauce. It’s a perfect comfort food for any day of the week.

Ingredients

  • 1 pound of boneless, skinless chicken breasts
  • 8 ounces of bacon, chopped
  • 8 ounces of mushrooms, sliced
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 12 ounces of your favourite pasta
  • Fresh parsley for garnish

Direction

1. Cook the Chicken

Start by seasoning the chicken breasts with salt and pepper. Heat one tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for about 6-8 minutes per side until it’s cooked through and nicely browned. Remove the chicken from the skillet and set it aside to rest.

2. Crisp the Bacon

In the same skillet, add the chopped bacon and cook until it turns crispy and golden. Use a slotted spoon to transfer the bacon to a plate lined with paper towels to drain excess fat. Reserve some of the bacon greases in the skillet for added flavour.

3. Sauté the Mushrooms and Garlic

Add the sliced mushrooms to the skillet and cook them for about 5 minutes until they become tender and lightly browned. Stir in the minced garlic and cook for an additional minute until fragrant.

4. Prepare the Sauce

Pour the heavy cream into the skillet with the mushrooms and garlic. Bring the mixture to a gentle simmer and let it cook for a few minutes until it thickens slightly. Stir in the grated Parmesan cheese until it melts and the sauce becomes smooth and creamy.

5. Combine the Ingredients

Slice the cooked chicken into bite-sized pieces and add it back to the skillet along with the crispy bacon. Stir everything together until the chicken and bacon are evenly coated with the creamy sauce. Season with salt and pepper to taste.

6. Cook the Pasta

While preparing the sauce, cook the pasta according to the package instructions. Drain the cooked pasta and add it to the skillet with the chicken and sauce. Toss everything gently to combine, ensuring that the pasta is well-coated with delicious flavours.
