Ingredients
3 tbsps olive oil
One large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 lbs spinach, rinsed and chopped
1/2 C. chopped fresh parsley
2 eggs, lightly beaten
1/2 C. ricotta cheese
1 C. crumbled feta cheese
8 sheets of phyllo dough
1/4 C. olive oil
Directions
- Coat a baking pan with nonstick spray, then set your oven to 350 degrees before doing anything else.
- Stir fry your garlic, onions, and green onions in olive oil for 4 minutes. Then add the parsley and the spinach, and cook it all for three more minutes.
- Remove all the contents.
- Combine feta, onion mix, ricotta, and eggs in a bowl.
- Coat a piece of phyllo with olive oil, then layer it in the pan.
- Add another piece and also more olive oil.
- Do these two more times.
- Add your ricotta mix, fold the phyllo around the filling, and seal it.
- Cook everything in the oven for 35 minutes.
- Then cut the contents into your preferred shape.
