Ingredients

2 cups black beans, soaked overnight

1 onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 bay leaf

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

2 tablespoons tomato paste

4 cups vegetable or chicken broth

1 tablespoon apple cider vinegar

Instructions:

Drain and rinse the soaked black beans.

In a large pot, heat the olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Cook until the onion becomes translucent, about 5 minutes.

Add the soaked black beans, oregano, bay leaf, cumin, paprika, salt, black pepper, and tomato paste to the pot. Stir well to coat the beans with the spices.

Pour in the vegetable or chicken broth and bring the mixture to a boil.

Reduce the heat to low, cover the pot, and let the black beans simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth if needed.

Once the beans are tender, stir in the apple cider vinegar and let it simmer for an additional 10 minutes.

Remove the bay leaf before serving.

Serve the Puerto Rican black beans over rice or with your choice of meat or vegetables. Enjoy!
