Broiled Salmon with Honey and Soy Sauce

Ingredients:

Cilantro leave, 1/4 cup

Scallions, 2 pieces

Cooking oil or vegetable oil, 2 teaspoons

Ginger (grated),1 teaspoon

Coarse salt and ground black pepper

Salmon fillets with skin, 4 pieces (about 6 oz. per piece) ounces each

Limejuice, 2 teaspoons

Soy sauce, 2 teaspoons

Honey, 2 teaspoons

Sesame seeds (black), 1/4 teaspoon

Cooked edamame, 1 1/3 cups

Fresh lime wedges for garnishing

Cooking Method:

Prepare the grill by preheating it to a medium-high heat setting. Grease the grates by spraying some cooking oil. Meanwhile, chop the scallion and the cilantro. Put these inside a bowl and add the ginger and oil. Season the mixture with ground pepper and salt.

Next, cut about two slits through the bottom portion of the salmon, which is about 3 inches in length. Put the herb mixture inside the fish, through the slits. Afterwards, season the exterior of the salmon with pepper and salt.

In another bowl, combine the honey, lime juice and soy sauce. Cook the salmon on the grill, with the skin facing up. You can cook each side for about 4 minutes. Brush the top of the salmon with the honey mixture, and continue to turn the fish to the other side so it would cook thoroughly. You can baste each side of the fish about four times to allow the flavour to integrate well.

Next, remove the salmon from the grill and place them on a serving plate. Sprinkle some sesame seeds on the top portion. Serve the dish with lime wedges and edamame on the side part of the salmon.
