  1. In a large mixing bowl, combine the bread flour and water. Stir until a shaggy dough forms, then cover with a damp cloth and let it rest for 30 minutes.
  2. Add the active sourdough starter to the dough and mix until well combined.
  3. Sprinkle the salt over the dough and knead it for about 10-15 minutes until the dough becomes smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise at room temperature for about 4-6 hours, or until doubled in size.
  5. Once the dough has doubled in size, gently deflate it and shape it into a round loaf.
  6. Place the shaped dough in a floured proofing basket or a bowl lined with a kitchen towel, cover it, and let it rise for another 2-3 hours, or until puffy.
  7. About 30 minutes before the final rise is complete, preheat the oven to 450°F (230°C) and place a Dutch oven or a baking stone inside to heat up.
  8. Once the dough has finished rising, carefully transfer it to the preheated Dutch oven or baking stone. Score the top of the dough with a sharp knife or razor blade.
  9. Cover the Dutch oven with its lid (or use a large overturned bowl to cover the baking stone) and bake for 20 minutes.
  10. Remove the lid and continue baking for another 20-25 minutes, or until the bread is deep golden brown and sounds hollow when tapped on the bottom.
  11. Allow the bread to cool on a wire rack for at least 1 hour before slicing. Enjoy your homemade sourdough bread!
