Ingredients
3 tbsps olive oil
One large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 lbs spinach, rinsed and chopped
1/2 C. chopped fresh parsley
2 eggs, lightly beaten
1/2 C. ricotta cheese
1 C. crumbled feta cheese
8 sheets of phyllo dough
1/4 C. olive oil
Directions
Coat a baking pan with nonstick spray, then set your oven to 350 degrees before doing anything else.
Stir fry your garlic, onions, and green onions in olive oil for 4 mins. Then add the parsley and the spinach, and cook it all for three more mins.
Remove all the contents.
Combine feta, onion mix, ricotta, and eggs in a bowl.
Coat a piece of phyllo with olive oil, then layer it in the pan.
Add another piece and also more olive oil.
Do this two more times.
Add your ricotta mix, fold the phyllo around the filling, and seal it.
Cook everything in the oven for 35 mins.
Then cut the contents into your preferred shape.
