Kaddu ka Bharta [Indian Pumpkin Curry]

Kaddu ka Bharta, also known as Indian Pumpkin Curry, is a delicious and flavorful dish that is popular in Indian cuisine. Made with fresh pumpkin, spices, and a hint of tanginess, this dish is a perfect complement to rice or bread.

Ingredients:

1 small pumpkin (kaddu), peeled and cubed

1 onion, finely chopped

2 tomatoes, finely chopped

2 green chillies, finely chopped

1 teaspoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon red chilli powder

1 teaspoon garam masala

Salt to taste

Oil for cooking

Fresh cilantro leaves, for garnish

Instructions:

Turn on the Instant Pot and select the Saute function. Heat some oil in the pot.

Add cumin seeds and saute until they start to crackle.

Add chopped onions and green chillies. Saute until the onions turn translucent.

Add ginger-garlic paste and saute for another minute.

Add chopped tomatoes and cook until they become soft.

Add turmeric powder, red chilli powder, and salt. Mix well.

Add the cubed pumpkin and mix everything.

Close the Instant Pot lid and set the pressure cooker function to Manual mode for 5 minutes.

Once the cooking time is over, let the pressure release naturally for 5 minutes, then do a quick release.

Open the lid and use a potato masher or a fork to mash the pumpkin until smooth or desired consistency.

Add garam masala and mix well.

Turn on the Saute function again and cook for another 2-3 minutes to let the flavours blend.

Garnish with fresh cilantro leaves and serve hot with roti or rice.

Note: You can adjust the spice level according to your taste preferences by adding more or less chilli powder and green chillies.
