Chimichurri is an oil-based seasoning sauce used to go with barbecued meats and churrasco. To add flavour and tenderise the meat, Argentines often marinate meats in Chimichurri.
Fresh oregano, parsley, and cilantro are mixed with a lot of red wine vinegar to make a strong sauce that goes well on grilled steaks and other meats.
Ingredients
1/3 packet of garlic salt
6 chilli peppers
2 sachets bouquet garni
1 large onion
½ tub of dried peppers
¼ cup finely chopped flat-leaf parsley
1 pint (500ml) of vinegar
2 pints (1 litre) oil
Direction
All ingredients, except the oil, should be boiled together in vinegar for five minutes.
Let the mixture cool.
Add the oil after the mixture has cooled.
Store in refrigerator.
