Coconut Jelly

Coconut jelly is a delicious and refreshing dessert that has been enjoyed by people all over the world for centuries. Made from the gelatinous meat and milk of the coconut, this sweet treat has a unique texture and flavour that sets it apart from other jellies. Ingredients:

  • 1 cup unsweetened coconut water
  • 2 ½ teaspoons unflavored gelatin powder
  • 2 ½ cups full-fat coconut milk
  • ¼ cup honey (or substitute with ⅓ cup liquid allulose for a keto version)
  • ½ teaspoon vanilla extract
  • Optional: 1 ½ cups sliced fresh fruit (mango, berries, pineapple, etc.)

Instructions:

  • Sprinkle the gelatin over ¼ cup of the coconut water. Whisk and let sit for 5 minutes.
  •  In a saucepan, combine the remaining coconut water, coconut milk, and honey. Heat over medium, stirring until honey is dissolved and coconut milk is hot (not boiling).
  •  Remove the saucepan from the heat. Whisk in bloomed gelatin and vanilla until smooth.
  •  Pour the mixture through a fine-mesh sieve into a measuring cup.
  • If using fruit, arrange it in serving glasses. Carefully pour the coconut mixture over.
  •  Refrigerate until completely set, at least 4-6 hours.

Tips:

  • Adjust sweetness:
  • Taste the mixture before chilling and add more sugar/honey if desired.
  • Experiment with flavours! Try adding a pinch of salt, a few drops of almond extract, or a splash of rum.
  • Garnish: Top with fresh fruit, shredded coconut, or a dollop of whipped cream.
