Texas Twinkies Recipe [Brisket Poppers]

Ingredients

12 medium-sized jalapeño chiles

3 tablespoons Pimiento and Cheese

12 slices Beef Brisket Flat, about 4 inches long

2 tablespoons BBQ Mother Sauce, Version 2

Directions

On a hot grill or under a broiler, grill the chiles and blister the skin on all sides. Remove them from the heat place them in a resealable plastic bag and seal them. Let sit for 5 to 10 minutes, then remove the skins, stem, and seeds.

Carefully stuff the chiles with pimiento and cheese so as not to break them apart. Wrap a piece of brisket around each pepper and secure it with a toothpick.

Then set into a muffin pan to hold the pepper upright using the toothpicks as “arms.”

Place the poppers on a cooler part of the grill and cook for 10 to 15 minutes, or until hot all the way through.

Remove, lightly brush the brisket edges with BBQ sauce, and serve.
